Almond flour chocolate chip cookies

This particular recipe is gluten free and vegan,however you can interpret it in many different ways and make it your own. I have used dark  dairy free chocolate chip but if you are ok with dairy you could use the semi sweet chocolate chip .

This was a super hit with my boys and is a great healthy snack for those afternoon sweet cravings.

Ingredients

(Makes 12-14 cookies)

2 cups blanched almond flour (alternatively you can use almond meal)

1/4 cup coconut oil melted

1/4 cup pure maple syrup

1/4tsp sea salt

1/2 tsp baking soda

2 tsp vanilla extract

1/2 cup dark chocolate chip(i used vegan/dairy free ones but you can use any other chocolate chip)

 

Method

Preheat oven to 180 deg celsius and line a large baking sheet with parchment paper

In a large bowl mic almond flour,oil,maple syrup,salt ,baking soda, vanilla and stir to create a sticky dough. Pour in the chocolate chip

Drop dough by heaping tablespoon on the baking sheet and then use hands to gently flatten them.

Bake cookies until they are firm to touch around edges. I baked them for 12 minutes at 180 deg cel.

Remove cookies from oven and let them cool. They do firm up more once cool

They can be stored at room temperature for 3 days but for 2-3 weeks if stored in the fridge in air tight container.
